A diner (in English diner, not to be confused with dinner) is a very specific American type of "public catering establishment." Not a café, although very similar, not a restaurant nor a canteen. It is a place where exclusively traditional American food (burgers are the main part of the menu) is served and operates from early morning, most often until late at night, and sometimes 24/7. Diners look very similar to each other: usually, it's an elongated room with separate booths for tables and a long counter. In the mornings, almost every breakfast (eggs, bacon, sausages, mushrooms) includes a sizable portion of specially fried potatoes known as hash browns.

Have a wide, stable bowl of cold water ready—you'll be rubbing the potatoes directly into the water to keep them from browning, which will make the hashbrown look much more appetizing. Peel the potatoes and grate them on a coarse grater.
Place a large (this is important) pan of water (2/3 of the pan water) over high heat and bring to a boil. Drain the potatoes in a colander and place in boiling water. Wait for the water to boil again and turn off the heat. Do not close the lid. Leave the potatoes in the hot water for 8 minutes.
Drain the potatoes in a colander or use a large slotted spoon to place them in a wide container to cool and dry slightly.
Place a large, nonstick, heavy-bottomed frying pan over medium-high heat. Let the pan get hot, about 2 minutes.
Mix potatoes with salt and pepper, pour melted fat and vegetable oil. Mix very thoroughly.
Place the potatoes in the pan to form large pancakes, approximately 12 cm in diameter and a little more than 1.5 cm thick. Fry for 3-4 minutes.
Use a wide spatula to turn the hashbrowns over; be careful as they may fall apart. However, if they fall apart, it’s okay, just put them back into the flatbread and fry, reducing the heat to medium, for 5 minutes.
If the hashbrowns are too plump, turn them over again and cook for another 2 minutes. Serve immediately.
