We suggest making a healthy and incredibly cute-looking broccoli omelet in a frying pan for breakfast. It’s true that it will take a few minutes longer to cook than a simple omelet because any additional ingredients need to be processed first (cut, fried, or boiled, as in our case) and then mixed with the egg mass. But that shouldn’t stop you! In any case, the result will be amazing, and the entire omelet-making process will take no more than 10 minutes.

First, prepare the broccoli for the omelet. Boil 2-2.5 liters of water in a small saucepan. Salt boiling water and add frozen broccoli to it. Cook for 3-4 minutes. Then drain the water through a colander and place the broccoli florets on paper towels to remove excess liquid.
Meanwhile, break the eggs into a deep bowl, salt and pepper them. Using a whisk or fork, thoroughly mix the yolks with the whites, salt and pepper. Pour in the milk and shake the mixture again until smooth.
Heat a frying pan with butter (if you don’t like it, you can use about 1.5 tablespoons of refined olive or sunflower oil to prepare an omelette. First, put blanched broccoli in the frying pan, sprinkle a little dried garlic on the inflorescences and, if desired, khmeli-suneli, fry with both sides for 1-2 minutes.
Pour the eggs beaten with milk into the pan, reduce the heat to medium, cover the pan with a lid and cook the broccoli omelette for 5-6 minutes until it “sets” on top. Do not open the lid while cooking, otherwise the omelette will collapse.
Remove the finished broccoli omelette from the heat, cut into four parts and carefully transfer to a dish using a wide spatula. Serve a hot omelet for breakfast with fresh vegetables and whole grain toast.
