Blueberry puff pastry pie can be classified as a quick pie, because ready-made puff pastry is a real lifesaver in emergencies. It makes sense to always keep a package or two of puff pastry in the freezer. The blueberry filling turns out very juicy, so be sure to sprinkle the berries with starch — during baking, a delicious layer of thick purple jelly forms at the bottom of the pie. According to our recipe, the pie is made fully open, but you can cut narrow strips of dough, twist them, or arrange them on the berries in a lattice pattern. If desired, add other berries or pieces of apple to the blueberries, and when you cut the pie into squares and place them on plates, decorate each portion with a big scoop of creamy ice cream.

Preparation Steps

Step 1

Remove the puff pastry from the refrigerator in advance and leave to thaw. Preheat the oven to 190 degrees. Place a large baking sheet on the middle rack of the oven; it should also become hot.

Prepare the filling. Sort through the blueberries, remove leaves and unusable berries. Place in a colander, rinse with cold water and spread in one layer on a towel.

Place the dried berries in a bowl, add starch and sugar. Gently mix the filling, being careful not to deform the berries. You can simply shake the bowl a few times to coat the blueberries in the sugar mixture.

Place a sheet of baking paper on your work surface and lightly dust it with flour. Place the dough on paper and roll it out to a thickness of 1 cm. Remove the baking sheet from the oven. Carefully transfer the paper with the rolled out dough onto the heated baking sheet.

Place the berry filling in the middle of the dough and spread it over the entire surface with a spatula, not reaching the edges of the dough by about 5 cm. Fold the edges of the dough up. Beat the egg and brush the dough.

Return the pan to the oven and bake the pie until golden brown, about 25 to 30 minutes. Transfer the cake along with the paper to a wooden board and let cool to room temperature.
