Mix cream cheese with powdered sugar. Make a cut in each date and remove the pit. Fill the dates with the cheese filling.
Grind the pistachios in a blender into small crumbs. To prevent them from turning into paste, it is better to do this in the “pulse” mode.
Melt the chocolate and butter in the microwave, turning it on several times for 10 seconds, stirring between heats.
Using a toothpick, dip the dates into the melted chocolate. Place the chocolate covered dates on a parchment lined plate. Immediately sprinkle the chocolate-covered dates with the pistachios. Place the date dish in the refrigerator until the chocolate is completely set.
