The classic pork liver pancakes from our recipe will turn out incredibly soft and will literally melt in your mouth. They require not much time and effort to prepare, but the result will exceed your expectations. Thanks to the semolina, the finished dish will be fluffy, and the baking soda will help eliminate the specific smell that some people dislike in pork and pork liver. This liver pancake recipe can be used as a base and experimented with by adding vegetables like grated carrots, zucchini, or broccoli, as well as spices and herbs to taste.

Bulb onions - 100 g
Wheat flour - 1 tbsp.
Semolina - 1 tbsp.
Mayonnaise - 1 tbsp.
Baking soda - 1.5 g

Pre-soak the pork liver in milk for at least one hour. This is necessary so that the characteristic bitterness leaves the product. Then dry with paper towels and cut into small equal pieces.
Cut the peeled onions into small pieces and place them together with the liver in the bowl of a blender or food processor. Chop the ingredients thoroughly and pour the resulting mass into a bowl.
Add flour, semolina, mayonnaise, baking soda (no need to extinguish it) and spices to the chopped liver and onion in a bowl. Mix all ingredients well.
Leave the bowl of pork liver pancake mixture to sit at room temperature for 30 minutes. This is necessary so that the semolina swells properly.
After the required time has passed, mix the entire contents of the bowl well again. Heat vegetable oil in a frying pan over medium heat and carefully place liver pancakes in the pan using a tablespoon.
Fry the pancakes over medium heat for at least 3 minutes on each side until golden brown. If you doubt that the pancakes will bake well, you can cook them for an additional 2-3 minutes, reducing the heat to low and covering the pan with a lid.
Remove the liver fritters from the pan and place on a paper towel to remove excess oil. Then serve the pancakes with any side dish you like.
