A PP Easter cake, prepared in accordance with the basic principles of healthy eating, will decorate the festive Easter table and will not violate your dietary principles! The ingredients do not include white sugar and yeast – instead, we will use a bit of agave or Jerusalem artichoke syrup and baking powder, replacing wheat flour with two types of gluten-free flour – rice and corn, and adding alternative milk – soy, almond, or coconut. By following our step-by-step recipe, you won't miss out on traditional treats, even during the holiday!

Corn flour - 200 g

Chocolate soy milk - 120 ml
Coconut butter - 50 g
Jerusalem artichoke syrup - 6 tbsp.
Lemon juice - 1 tbsp.

Dried cranberries - 50 g

Separate the yolks from the whites and place in separate bowls. Pour soy milk, 5 tbsp into the bowl with the yolks. Jerusalem artichoke syrup and coconut oil, mix thoroughly with a mixer.
Combine both types of flour. Add baking powder and mix with a whisk or spatula. Pour into a bowl with yolks and milk, add lemon juice and mix again with a mixer. Stir dried cranberries into the batter.
Beat the whites into a stable foam. Add the whites to the bowl with the dough in three additions. After each addition, stir the dough with a spatula, being careful not to disturb the fluffy texture of the whites.
Preheat oven to 180°C. Place a rack on the middle rack of the oven. Fill a 16cm diameter cake pan no more than half or two thirds full with dough.
Place the pan with the dough in the oven and bake the PP Easter cake for 30-35 minutes. Check the readiness with a wooden skewer - there should be no crumbs or unbaked dough left on it.
Remove the cake from the oven and cool completely on a wire rack. Toast the coconut flakes in a dry frying pan until light golden brown. Brush the top of the Easter cake with the remaining syrup and sprinkle thickly with coconut flakes.
