Boiled Beet Salad Finger-Licking Good is a very tasty dish that can be served as a standalone appetizer or as a side dish to meat or poultry. The salad looks especially beautiful if the beets are grated on a Korean-style vegetable grater or cut into thin strips using a very sharp knife. Sweet beets go perfectly with salty and spicy flavors. Therefore, such a salad can be used as a spread for sandwiches, for example, with spicy salted sprat. In this case, the vegetables in the salad need to be finely grated.

Tomato juice - 100 ml
Sweet pepper - 1 pcs.

Boil the beets until tender, cool slightly in ice water and peel. Grate using the finest Korean carrot grater. Try how sweet beets are. If not very good, then sprinkle a little sugar and mix.
Grate the carrots using the same grater. Cut the onion into very small cubes. Finely chop the garlic with a knife or pass through a press. Chop the sweet pepper thinly and then cut crosswise into strips about 1 cm thick.
Heat vegetable oil in a deep frying pan with a thick bottom. Add the onion and saute it for 4-5 minutes, stirring occasionally. Add garlic and cook for another 2 minutes. Then add carrots and fry for another 5 minutes.
Add bell peppers to the pan, stir and sauté for 1-2 minutes. Remove the skins from the tomatoes and grind them on a grater or in a blender in pulse mode
Add beets, apple cider vinegar, mashed tomatoes and tomato juice to the pan, add salt and pepper. Simmer the salad, stirring occasionally, until the liquid has completely evaporated. Halfway through cooking, taste the salad and add a little more salt and sugar if necessary. Place the finished salad in jars, cool and refrigerate for at least 3 hours.
