Amaranth porridge is gaining popularity in Russia, along with the recognition of the grain crop from which it is made. It cannot be called fundamentally "new": the first mentions of it appeared 8,000 years ago. The journey of amaranth to Russia was quite complex: interest in the Mexican "exotic" was shown by academician Vavilov back in the 1930s, but that was the end of it. However, in the 1990s, this product penetrated our market and established itself. Interest in amaranth began to grow, and soon it was called a "superfood" that could even extend life. Therefore, the question of how to prepare this product is not trivial at all. We offer a recipe for amaranth porridge with milk, which might become a real discovery for you. Prepare cereal for porridge. Pour the amaranth seeds into a fine sieve and rinse thoroughly with running water. The flowing water should become completely transparent.
Place the amaranth seeds into a heavy-bottomed saucepan. Fill with drinking water. Add salt and stir. Place over high heat and bring to a boil.
Cover the pan with amaranth seeds tightly with a lid and cook over medium heat for 5 minutes. They should swell and the mass should acquire a thick consistency.
Pour hot milk into the pan with amaranth. Stir and bring to a boil again. Cook the amaranth porridge over low heat, covered, for about 25–30 minutes.
Stir the amaranth porridge periodically with a tablespoon or a spatula to prevent it from burning. Add butter to the finished porridge/ Stir.
Amaranth porridge cooked with milk can be served, supplemented with jam or jam, berries or pieces of fruit. If desired, add sugar or honey to it.
