Preparation Steps

Step 1

Preheat the oven to 180°C. Grease a 15x28cm ovenproof cake pan with butter, sprinkle with flour and shake off excess. Place a rack on the middle rack of the oven.

Place the washed spinach in a colander and pour boiling water over it. Shake off the water. Place the spinach in the glass of an immersion blender and puree until smooth. If the blender has difficulty blending the spinach until smooth, add 1 tablespoon of water.

Beat butter with regular and vanilla sugar with a mixer. Add the eggs one at a time, stirring after each with a mixer. Add olive oil, lemon juice and spinach puree and stir again.

Sift the wheat flour with baking powder through a fine sieve. Pour the flour mixture into the bowl with the spinach mixture and mix thoroughly. The dough should turn light green.

Transfer the batter to the prepared pan and place in the center of the oven. Baking time for green cake is 30-35 minutes. Check the readiness with a wooden skewer - there should be no uncooked dough left on it. If necessary, continue baking the cake for another 5-7 minutes.

Remove the pan from the oven and leave the cake in it for 5 minutes. Carefully transfer the cake to a wire rack and cool completely. If desired, decorate the cake with powdered sugar before serving.
