Easter cake in the microwave is a quick and convenient solution for those who want to enjoy the taste of Easter cake without spending long hours in the kitchen. This recipe is also suitable for those who are not confident in their oven. The microwave won't let you down — you can make a wonderful fragrant and fluffy dessert without any effort! This cake is made without yeast, so rising and proofing the dough is not required. This means that from mixing the dough to serving the main Easter treat at the festive table, it will take no more than half an hour!

Milk - 200 ml
Butter for greasing finished flatbreads - 100 g
Eggs - 3 pcs.
Sugar - 180 g
Lemon - 1 pcs.
Raisin - 50 g
Baking powder for the dough - 2 tsp.
Vanilla sugar - 1 tsp.
Salt - 0.3 tsp.

Melt and cool the butter to room temperature. Pour hot water over the raisins and leave for 5 minutes. Drain the water and dry the raisins with paper towels.
To remove the waxy coating, wash the lemon in hot water with a stiff brush. Using a fine grater, remove 1 tsp. zest. Cut the lemon in half and squeeze 1 tbsp. l. juice
In a large bowl, combine eggs, regular and vanilla sugar and salt and beat with a mixer until fluffy, 5 minutes. Pour in the milk and melted butter, stir again.
Sift the flour and baking powder through a fine sieve. Pour the flour mixture into the bowl with the liquid ingredients. Add raisins, lemon zest and lemon juice. Stir the dough until smooth.
Pour the dough into 4 paper cake molds with a diameter of 10-12 cm or into 2 molds with a diameter of 16 cm. Fill the molds no more than halfway - the dough will rise greatly.
Place the molds in the microwave and bake small cakes at maximum power for 5 minutes, large ones for 8 minutes. Check doneness with a wooden skewer and continue cooking for another 2-3 minutes if necessary.
