In Soviet times, every bakery sold a May cake. It was baked in a brick shape, with a lot of raisins inside, and the top was decorated with powdered sugar. One of the benefits of this pastry was that it stayed fresh for a long time. Few people knew back then that the recipe for the cake was entirely "borrowed" from the recipe for Kulich, only it had much less butter, eggs, and dried fruits. Often, butter was replaced with margarine. The preparation process was also simplified, so baking such a cake was not particularly difficult even for novice cooks. It would still be the star of a home tea party today if you choose high-quality ingredients for it. You can also bake simple homemade Kulichi using this recipe, just add more butter, dried fruits, and spices to the dough.

To prepare the May cake, first set out the dough. Pour 100 ml of warm water into a bowl, add yeast, add 1 tbsp. l. sugar and 2 tbsp. l. flour, mix. Cover with film and leave in a warm place for 20 minutes to rise.
Pour hot water over the raisins for 15 minutes, drain the water, and dry the raisins. Roll the raisins in flour to better combine with the dough. You can soak the raisins in cognac or rum overnight to give your baked goods a better flavor.
In a bowl with a suitable dough, add 30 ml of water, the remaining sugar, vanilla sugar, separately beaten eggs with a fork, mix. Add sifted flour in portions, add salt, mix thoroughly.
Melt the butter and pour into the dough. Knead the dough with your hands or with a mixer fitted with a hook attachment. Knead for at least 7-10 minutes. At the end of kneading, add raisins sprinkled with flour and stir.
Roll the prepared dough into a ball, place in a bowl, cover and leave to rise for 1 hour. During this time, knead the dough twice. When it rises for the third time, do not crush it, carefully place it on the table and divide it into 2 parts. Roll the dough into small bars.
Grease two small muffin tins with butter. Transfer the dough into them to 2/3 of the height of the molds. Place in a warm place and let the dough rise to the full height of the pans.
Carefully place the pans in the oven preheated to 180°C and bake for about 40 minutes. Check the readiness of the cupcakes with a wooden skewer - it should come out dry.
Remove the finished muffins from the oven and let stand in the pans for a while, then transfer to a wire rack and sprinkle with powdered sugar.
