Green buckwheat cake is an original and healthy treat for supporters of wholesome and balanced nutrition. This cake is a wonderful alternative to regular desserts, as it has little sugar and contains no wheat flour. This makes it ideal for people with gluten intolerance, as well as for those who limit their intake of wheat flour. Green buckwheat has its own distinct flavor. Despite not being roasted, products made from it have a light buckwheat taste. Therefore, the cake will be especially appealing to buckwheat lovers.

Green apple - 1 pcs.

Sugar - 100 g

Baking powder for the dough - 2 tsp.

Wash the green buckwheat thoroughly and place in a bowl. Pour in 500 ml of water, close the bowl and refrigerate for at least 4 hours. Drain in a colander and rinse with cool water.
Peel the apple, remove the seeds and chop as desired. Place the apple and green buckwheat in a blender bowl and blend until smooth. Add olive oil, cocoa powder, baking powder and vanilla extract and stir to combine.
Beat eggs with sugar until fluffy, 5 minutes. Combine with green buckwheat dough, add chopped walnuts and lemon juice, mix with a spatula.
Preheat the oven to 180°C. Place a rack on the middle level. Line a rectangular pan measuring 12x20 cm with baking paper or grease with vegetable oil.
Transfer the green buckwheat batter to the prepared pan and bake in the center of the oven for 35-40 minutes. Check doneness with a wooden skewer; if necessary, bake the cake for another 5-7 minutes.
Combine coconut urbech with honey and lemon juice. Remove the cake from the pan and carefully transfer it to a wire rack. Using a spatula or spatula, decorate with coconut frosting and let the green buckwheat cake cool to room temperature.
