Drain the liquid from the pineapple jar. Place the pineapples on a cutting board and cut into small pieces. Separate the basil leaves from the stems. Finely chop the large leaves, leaving the top leaves for decoration.
Grate the cheese on a coarse grater. Spread a thin layer of mustard on one side of the bread. Preheat oven to 180°C. Line a baking tray with baking paper.
Place the pieces of bread on a baking sheet, mustard side up. Top each piece with slices of ham, then arrange the pineapple slices and sprinkle evenly with chopped basil.
Sprinkle the sandwiches with cheese and bake on the middle rack of the oven for 15 minutes or until the cheese is melted and lightly browned. Garnish the sandwiches with basil and serve hot.
