It is said that in the mid-90s, a regular visitor to a Moscow café puzzled the barista with a request to serve some new version of coffee, as he was bored with the rest of the menu. For a while, the establishment's best specialists racked their brains over what to offer the dear guest. And soon they came up with an idea. The recipe was quite simple: 10% cream was whipped with vanilla sugar, slightly heated, and poured into an espresso. The drink turned out to be sweet and delicate, and the demanding client, as well as his friends, really liked it. This café regular was named Rafael. And people started asking to make coffee "like for Raf." This eventually became known as "Raf." Now there are many variations of this drink: lavender, citrus, caramel, juniper, pumpkin, cheese.
