Vinaigrette with mayonnaise is made less often than with vegetable oil, but this option also has the right to exist. The taste of this dish turns out to be much more delicate, which is why many people like it. The recipe differs from the classic only in the dressing, although if desired, the composition of the vinaigrette can be slightly changed, for example, instead of pickles, you can use marinated ones or lightly salted herring. If you want more freshness, add a bit of finely chopped white cabbage to the salad, pre-rubbed lightly with salt.

Prepare the vinaigrette ingredients. Wash beets, potatoes and carrots thoroughly with a brush. Dry lightly and wrap each root vegetable in foil. Place on a baking sheet and bake at 200°C: potatoes and carrots for about 40 minutes, beets for an hour. Readiness depends on the size of the vegetables, check it by piercing them with a fork. Let cool.
Peel the onion and cut into small cubes. Place in a large bowl and cover with white wine vinegar. Leave for 15 minutes at room temperature. And then drain in a colander.
Peel the cooled root vegetables and cut them individually into small cubes. Mix the beets in a separate container with vegetable oil: this will make them less likely to color the other ingredients of the vinaigrette.
Cut the pickled cucumbers into small cubes. Add to bowl along with pickled onions. Place potatoes, carrots and beets in oil, as well as green peas into it.
Season the vegetables with mayonnaise. Salt and pepper to taste. Stir and transfer to a salad bowl. The finished vinaigrette can be decorated with leaves of any greenery.
