Yes, their appearance might be slightly puzzling, but thanks to their neutral taste and pleasant mushroom aroma, enoki mushrooms pair well with most vegetables and sauces, absorbing their flavors and adding a crispy texture to the dish. At the same time, they are easy and simple to cook — just cut off the lower part of the bundle, quickly rinse under running water, dry, and place in a hot pan. In just 5 minutes, the dish is ready. For the sauce, pass the garlic through a press, finely chop the green onions and cilantro. Add to soy sauce: garlic, green onions, cilantro, hot sauce, sesame oil and sesame seeds, sugar. Mix everything thoroughly and leave the sauce to infuse.
Rinse the enoki under running water and dry, placing it on a sieve. Cut off the lower darkened part of the mushrooms, literally 2-3 cm. Divide large bunches of mushrooms into equal smaller bunches, about 1-1.5 cm thick.
Cut off the white part from the green onion feathers. Cut the green part in half lengthwise and soak in cold water for 10 minutes. Tie each bunch of enoki with strings of green onions, trim off the excess ends.
Beat eggs with salt and 1 tbsp. l. water in a wide-bottomed bowl. Heat the vegetable oil well in a thick-bottomed frying pan and reduce the heat to low. Dip the enoki bundles into the egg mixture and thoroughly soak them in the egg. Carefully transfer the bunches into a frying pan and fry on all sides until golden brown. Serve with sauce.
