To prepare the dough, heat the milk to 35°C and pour into a large bowl. Add salt and sugar, add half the flour and dry yeast and mix with a mixer.

Cover the bowl with the dough with cling film and leave in a warm place for 1 hour. The dough will approximately double in volume. Melt and cool the butter.

Prepare the filling for the pies. Cut the onion into small cubes. Heat vegetable oil in a deep frying pan and fry the onion over medium heat until golden brown. Grate the pickled cucumbers on a coarse grater and add to the onion. Simmer the filling over medium heat, stirring occasionally, until all the liquid has evaporated, about 7 minutes. Remove from heat and let cool.

Place the dough on a floured work surface. Form a roll 3-4 cm thick and cut it into pieces 3-4 cm long. Roll each piece of dough into a ball and leave them for 15 minutes, covered with a towel.

Roll out the cakes to a thickness of 5 mm, place 1-2 tbsp in the middle of each. l. fillings. Pinch the pies tightly and place on a baking sheet lined with baking paper.

Heat vegetable oil in a deep frying pan to fry the pies. The oil layer should be at least 4 cm. Check the readiness of the oil by dropping a piece of dough into it. If it browns quickly, the oil is hot enough.

Place 2-3 pies in the oil (the pies should lie loosely in the pan) and fry until they are browned on one side. Then carefully turn over to the other side and continue to fry until done. Transfer the finished pies to a plate lined with paper towels. Let the oil in the pan warm up a little and lower the new batch of pies.
