Prepare the ingredients for the salad. Peel the carrots (this is convenient to do with a special vegetable peeler) and cut off the ends. Rinse and grate using a medium grater into a bowl.
Lightly salt the carrots and stir. Leave for 5 minutes so that it produces juice. Peel the garlic cloves. Pass through a press and add to a bowl with grated carrots.
Pepper grated carrots with garlic. Add mayonnaise (adjust the amount to your taste) and stir. Transfer to a salad bowl and serve immediately.
