You can choose any type of squid for this dish: fresh, if you're lucky, or frozen. It's better to get gutted squid bodies to save time on extra steps. You can also buy frozen squid rings, just without the breading, and use those. The sour cream for the sauce should be high-fat—20% and up, so that the sour cream sauce doesn't separate when simmering in the pan. To thicken the sauce, you can use either potato or corn starch. The side dish can be anything—up to your taste. Or simply serve the dish with artisan bread. It's a unique pleasure to dip a piece of bread into the tangy sour cream sauce!

Prepare ingredients for cooking squid in sour cream sauce according to this recipe. Remove the sour cream from the refrigerator; it should be at room temperature. If the squid is frozen, defrost it in advance by placing the bag in cold water for 20 minutes.
In a large saucepan, bring 2 liters of water to a boil and add salt. Dip the gutted squid carcasses into boiling water for 2-3 minutes, then immediately drain them into a colander.
Let the squid cool slightly under running cold water in a colander. Then place them on a cutting board, remove the films and remove the hard plates from the pulp. Cut the squid fillet into medium-thick strips.
To prepare sour cream sauce in a frying pan, finely chop the onion. Crush the garlic cloves with the back of a knife and then chop into large pieces. Finely chop the parsley and dill.
Heat vegetable oil in a frying pan. Add garlic to the oil and fry for 3 minutes to allow the oil to absorb its flavor. Then remove the garlic. Place the onion in the pan and cook, stirring for 5 minutes, without letting the onion brown. Finally, sprinkle the onions with starch.
Pour sour cream into a frying pan with onions, stir, bring it to a boil over low heat, pour in a little hot water. Add chopped squid, salt and pepper, cook for 2 minutes and remove from heat.
Immediately place hot squids cooked in sour cream sauce in a frying pan into portioned plates and sprinkle with chopped parsley and dill. Serve with any side dish.
