Pork in pomegranate sauce is an original dish with a rich and vibrant flavor. The pomegranate sauce not only serves as the base for the marinade but also gives the meat an extraordinarily appetizing appearance. You can prepare the pork with Azerbaijani Narsharab sauce, as well as with sour Turkish, Iranian, or Georgian pomegranate sauces; it's best to add a bit more honey to these for extra flavor! Pat the pork dry with paper towels. Cut the meat across the grain into slices 1.5 cm thick. Sprinkle each piece with ground black pepper on both sides.
Prepare the marinade. Pour pomegranate and soy sauce into a large bowl, add 1 tbsp. l. olive oil, dried garlic, ground coriander and honey. Stir thoroughly with a whisk until smooth.
Place the meat in a bowl and turn several times to coat the slices evenly with the marinade. Cover the bowl with cling film and leave on the work surface for 45 minutes.
Place a griddle pan over medium-high heat. Grease the bottom with olive oil and heat the pan for 1 minute. Remove meat from marinade and fry for 5 minutes. Carefully turn over and continue cooking for another 5 minutes.
Remove the pan from the heat, cover the meat with foil and leave for 10 minutes. Place the pork on plates and sprinkle with chopped cilantro. Serve with potatoes, rice, couscous or bulgur.
