Step 1

Prepare salad ingredients. Peel the beets, wash and grate on a coarse grater. Peel the onion and cut into rings. Cut the pickled cucumbers into strips.

Heat vegetable oil in a large frying pan. Place the onion in it and, stirring, fry until golden brown. Add beets to the onions, pour in vinegar and stir. Simmer over low heat for 10 minutes (the beets should become soft). Pour in the brine and add the cucumbers. Simmer the vegetables covered over low heat for 10 minutes.

Remove any rough stems from the parsley. Finely chop the remaining greens. Stir the salad. Season with salt and pepper if necessary. Pass the garlic through a press, add to the pan and stir. Sprinkle the salad with parsley before serving.
