If you thought that strawberry gazpacho is a dessert soup, you are mistaken. It is as much a savory appetizer soup as the many other variations of the famous Spanish specialty, just particularly fragrant. In strawberry season, every self-respecting cold soup lover is obliged to prepare such gazpacho. The riper and sweeter the strawberries, the tastier and more aromatic your gazpacho will be. At the same time, if the strawberries are "not quite there" and lack sweetness, gazpacho is an excellent way to use them. You can add a bit of sugar to the soup if desired. And if it lacks acidity, squeeze some lemon juice into the gazpacho in addition to balsamic vinegar.

Peel the tomatoes. To do this, make cross-shaped cuts on the fruits and lower the tomatoes into boiling water for 10–20 seconds. Then remove and submerge the fruit in a bowl of very cold water. The skin will come off easily.
If the cucumbers have rough skin, peel it off with a vegetable peeler. Remove the seeds from the pepper. Cut the tomatoes, peppers and cucumbers into pieces of any size and puree them together with the garlic in a blender.
Remove the sepals from the strawberries. Set aside a few berries for decoration; puree the remaining ones in a blender until smooth. Combine strawberry puree with vegetable puree.
Season the gazpacho with olive oil and balsamic vinegar, and add salt to taste. Finely chop the basil leaves and add to the soup. Place the gazpacho in the refrigerator for at least half an hour.
Pour the strawberry gazpacho into glasses or bowls and add ice cubes. Garnish the soup with strawberry slices and basil leaves. Pepper and drizzle with olive oil.
