Potato pancake patties are a lifesaver dish. They will not only diversify your menu and serve as a substitute for draniki or fritters, but also give new life to the mashed potatoes from the previous day that you're tired of having as a side dish. After all, everyone knows: mashed potatoes are best eaten right away, while they're fresh, fluffy, and airy. If they've been sitting in the fridge, the enjoyment won't be the same. Prepare the patties in a skillet using our recipe. That said, you don’t have to wait until you have leftover mashed potatoes in the fridge to make them. The recipe is worth it to boil potatoes specially, mash them, and then follow the plan provided.

If your mashed potatoes are stored in the refrigerator, remove them and bring them to room temperature. Combine the cream with butter and heat slightly until the butter melts. You can do this in the microwave.
Add sugar to the warm butter mixture and let it dissolve. Add the mixture to the mashed potatoes and stir until smooth. Salt and pepper to taste.
Finely chop the dill - only tender leaves, without rough stems. Add dill to mashed potatoes and stir so that the greens are evenly distributed throughout the mixture.
Gradually add flour to the mashed potatoes, sifting it in portions through a fine sieve and stirring the mixture. Add flour until you have a soft pliable dough. You may need a little less or a little more flour than the stated amount - it all depends on the initial density of the puree.
Separating small pieces from the dough, roll the balls with your hands, and then on a surface sprinkled with flour, roll them with a rolling pin into flat cakes about 0.7 cm thick. You can do it differently: roll out one layer and cut out circles from it with a glass.
Heat a wide frying pan with vegetable oil. Fry the tortillas over medium-high heat on both sides until deliciously golden brown. Serve immediately with sour cream and fresh herbs.
