Cauliflower with tomatoes is an amazingly tasty vegetarian dish that, however, can also make an excellent side dish for meat or poultry. And this is one of those cases where both the cooking process (simple, fairly quick) and the splendid result are gratifying. We are confident that even not-so-experienced cooks can easily handle our recipe, and the successful experience will inspire them to new achievements. Prepare all ingredients for cauliflower stew. Peel the onion and garlic, chop finely. Cut the tomatoes crosswise on top and place them in a pan of boiling water for 1 minute.
Remove the tomatoes with a slotted spoon and place in a colander. Rinse several times with cold water, then peel off the skin. Cut the tomatoes into small slices.
Heat olive oil in a saucepan. Place onions and garlic in it. Cook over low heat until soft (3-4 minutes). Add chopped tomatoes and simmer for 7 minutes.
Rinse the cauliflower and separate into florets. Cut the stem into thin strips. Add to the saucepan with the tomatoes, season with salt, pepper and coriander. Close and simmer for 15-20 minutes.
Wash the greens and chop finely. Remove the pan with the stewed cauliflower from the heat. Add chopped herbs and stir. Serve the dish hot or warm.
