Place the chocolate on a heavy cutting board and chop very finely. Place chocolate chips in a heatproof bowl.
Place the bowl of chocolate in a pan of hot water. Place on low heat (the water should not boil too much). Stir with a wooden spatula until completely dissolved, 2–3 minutes.
Place the bowl of chocolate in a bowl filled with ice. Stir until the chocolate cools to body temperature. This is the optimal temperature for working with melted chocolate.
