Try to find special suluguni for grilling in the form of a long sausage, but you can also use the regular, smoked kind. As a sauce for such khachapuri, you can serve adjika, feijoa mashed with sugar, or any other sauce to your taste.

Cut Suluguni into rectangular “barrels” (5 cm long, 2-3 cm wide, 3 cm high). Place the cheese on the skewer lengthwise diagonally so that the cheese does not tear.
Roll out the puff pastry lengthwise, cut in half, roll out into two layers, then cut into rectangles 0.2 cm thick, 6-6.5 cm wide and 47-50 cm high.
Wrap one rectangle of rolled dough overlapping the suluguni and pinch the edges tightly. Then wrap the resulting structure with another rectangle of dough.
Fry the cheese and dough strung on a skewer on the grill until golden brown and cooked through.
Serve on a wooden board, place matsoni and any set of sauces next to it.
