The preparation of royal apricot jam is different from all other options: the fact is that it is not cooked in the usual sense of the word. We simply soak the fruits in hot syrup over an extended period, as a result of which they receive sufficient thermal treatment to be well preserved. At the same time, the distinctive aroma, bright color, and shape of the fruits remain unchanged. Royal apricot jam turns out to be not only very tasty but also beautiful. The fruit kernels add a special charm to it and turn the dish into an exquisite dessert worthy of the highest level table.

Prepare the fruits for making royal jam. Wash the apricots thoroughly and dry well with a paper towel. Carefully cut or cut the fruits into halves and remove the seeds.
Chop the apricot kernels and remove the kernels. Remove the skin. If this is difficult to do, dip them in boiling water for 1 minute, then place them in a sieve and rinse them with ice water several times. Place the kernels into the apricots.
Place the prepared apricots in a heatproof bowl. Pour sugar into a saucepan. Pour in drinking water, stir and place over medium heat.
Bring to a boil and cook the royal jam syrup for about 5 minutes. Remove from heat and immediately pour over apricots in a bowl. Let cool completely at room temperature.
Carefully pour the apricot syrup into the pan. Place on the heat again and bring to a boil. Cook for 3 minutes. Remove from heat and pour over apricots. Let cool. Repeat this at least 3-5 times.
Transfer the hot royal apricot jam into dry, sterilized jars. Wipe the top of each thoroughly and cover with a plastic lid. Let cool. Store in the refrigerator.
