Peel the beets and cut into thin slices. Finely chop the apples along with the core. Place everything in a wide bowl, add sugar and pour in warm boiled water so that it covers the beet layer by 2-3 cm. Mix well until the sugar dissolves. Leave the mixture for 10 days at room temperature. Stir with a wooden spoon 2-3 times a day.
After 10 days, strain the infusion. Place the beets and apples in a sieve and squeeze the juice into the infusion.
Pour into a wide-necked container. Cover with gauze, tie and place in a dark place for another 25–30 days. Then filter the vinegar, pour into bottles and close the lids tightly. Keep refrigerated.
