Pelnyane is a traditional Udmurt dish that used to be prepared for major holidays and served to the most honored guests. Translated from Udmurt, pelnyane means "bread ear." It is made from three types of meat, and to make the filling juicier, one end of the pelnyane "ear" is always left open. Pelnyane is served with tomato sauce, greens, sour cream, mayonnaise, or horseradish sauce.

Prepare the dough. In a bowl, combine water, egg, salt and flour. Mix the dough. Transfer the finished dough into a plastic bag and leave for 10-15 minutes.
Cooking minced meat. Cut beef, lamb, pork shoulder, lard and onion into small pieces and grind in a meat grinder with 2 grates (large and small) once. Season with salt and pepper. Mix thoroughly. We do not store finished minced meat.
Roll out the dough into a large thin layer and cut out circles with a glass or similar diameter mold.
Place the minced meat in the center of each circle, pinch the edges and give the dumpling the shape of an ear. Be sure to leave a hole on one edge - for rich broth.
Place in boiling salted water and cook until the dumplings float to the surface. Serve hot with any sauce.
