In a bowl, mash the blue cheese with a fork, add soft goat cheese and cream cheese, mix until smooth.
Finely grate hard goat cheese or Parmesan cheese. Place it in a flat bowl.
With wet hands, take about 1 tsp. with a heap of soft cheese mass, roll it into a ball, then use your finger to make a depression in the ball and place a nut in it. Then cover the hole with cheese and roll again into a tight, neat ball.
Roll the finished ball in grated cheese and place on a plate. Place the dish in the refrigerator for at least 30 minutes before serving.
