Beat the yolks until they form a thick creamy mass.
In a separate bowl, whip cream with mascarpone. Confectionery cream differs from regular cream in that it allows you to extend the shelf life of dessert. At home, the usual 33% will do. Bring the cream with mascarpone until smooth, add the yolks with powdered sugar and work with a whisk again.
We brew coffee and pour in Amaretto to taste. Take any shape and coat it with cream. (Italians generally use a salad bowl; at Probka they adhere to the same rule and prepare this dessert exclusively in large dishes, turning laying out a portion of tiramisu into a real ritual.
Then dip the Savoiardi cookies in not very hot coffee and place them in the selected container. Top with a layer of cream. And so twice. Cookies - cream. Sprinkle with cocoa and garnish with mint.
