This apricot pie in the oven allows you to combine two ingredients in one dish that incredibly harmonize with each other. We are talking about almonds and apricots. If you haven't combined them before — be sure to try it and see that they are simply made for each other! The dough with added almonds turns out pleasantly moist and not too sweet, while the apricots add a delightful tartness and unique aroma to the pastry. You can, of course, use canned fruit, but be sure to try using fresh seasonal ones at least once. With them, the apricot pie in the oven turns out significantly tastier!

Prepare the ingredients for the apricot pie. Cut the butter into small cubes and leave at room temperature for 30 minutes to soften.
Place the almonds in a saucepan of boiling water and keep on heat for 3 minutes. Then put it on a sieve and pour cold water over it several times. Peel off the skin.
Place the almonds in a single layer on a dry frying pan. Place on low heat. Stirring constantly with a spatula, dry the almonds. This will take about 5–10 minutes. Let cool, then puree in a blender.
Prepare the dough for the apricot pie. Beat butter with sugar. Add eggs and beat again. Combine almonds with flour, then with egg-butter mixture. Place the resulting dough into the mold and smooth it out.
Preheat the oven to 190°C. Peel the apricots and place them on the almond dough. Sprinkle with sugar and bake for about 40 minutes. Let cool until warm, transfer to a plate and serve.
