Place the yeast, flour and warm water in a bowl and knead the dough well. Then place the bowl of dough in the oven, preheated to 40°C and leave to rise for 30 minutes.
Remove and knead the dough in warm milk, olive oil and well-cut olives. Sprinkle with a little flour and leave to rise for 45-55 minutes.
Next, make two or three flat loaves and brush with hot water using a brush. Leave for 20 minutes. Bake at 200-220°C until brown and crusty.
