Truffles are perhaps the most popular type of candy that can be made without much experience. Caramelized chocolate truffles with salt can be easily made by novice confectioners and chocolatiers. However, a good amount of effort will be required for tempering the chocolate.

Preheat the oven to 180°C. Place the chocolate on a baking sheet with a silicone mat and heat it for 4 minutes, each time between passes using a silicone spatula, spreading it onto the clean surface of the silicone mat so that the chocolate remains liquid. When the chocolate turns a caramel color (at about 16 minutes), remove the baking sheet and transfer the chocolate to a bowl.
Mix cream with glucose and bring to a boil. Pour the cream into the melted chocolate. Blend with an immersion blender. Add salt and stir. Leave to crystallize for 12 hours.
Form into round truffles, 10 g each.
Temper chocolate for coating. Place the prepared candy on a fork and glaze the candy. Leave until the chocolate hardens completely.
