24 hours before preparation, mix the cream with coffee beans and leave until used.
For the coffee ganache, melt 200 g of chocolate.
Mix cream with glucose and bring to a boil. Strain to remove coffee beans. Pour the cream into the melted chocolate. Blend with an immersion blender.
Pour the chocolate mixture into a special frame. Leave to crystallize for 2-3 hours.
For the praline ganache, melt the chocolate. Mix with praline and waffle crumbs. Knead the resulting mass and place it on top of the coffee filling. Leave to crystallize at 12–14 °C, 12 hours. Cut into cubes with a side of 2.5 cm.
Temper chocolate for coating. Place the prepared candy on a fork and glaze the candy. Leave until the chocolate hardens completely.
