Step 1

Prepare khachapuri ingredients. First, transfer the dough from the freezer to the refrigerator to allow it to thaw completely. Then lay it out on your work surface in a single layer. Leave for 30 minutes at room temperature.

Prepare the khachapuri filling. Grate both types of cheese on a coarse grater and combine. Cut each layer of puff pastry into 2 strips. Roll them out slightly to make them wider.

On the long side, begin to roll each strip towards the middle until there is about 5 cm between them. Connect them on the right and left, then carefully fasten (you should get a “boat”). Move the sides apart to create more space in the middle.

Preheat the oven to 200°C. Place the resulting dough pieces on a baking sheet lined with baking paper. Distribute the cheese among the boats. Lightly beat one egg and brush it onto the edges of the puff pastry using a brush.

Bake khachapuri for 15 minutes. Then take out a baking sheet with them, release an egg onto each. Return to oven for 5 minutes. Before serving, khachapuri can be sprinkled with herbs.
