The recipe for puff-pastry khachapuri a la Adjarian style is a great opportunity to enjoy a favorite flavor without spending much effort and time on preparation. Traditionalists might be outraged by such a liberal take on the classic dish, but we certainly know that sometimes it's okay to deviate from the rules. Especially since the appearance of Adjarian-style khachapuri made from yeast-free puff pastry closely resembles the "original": the same "boats" with an egg. Prepare khachapuri ingredients. First, transfer the dough from the freezer to the refrigerator to allow it to thaw completely. Then lay it out on your work surface in a single layer. Leave for 30 minutes at room temperature.
Prepare the khachapuri filling. Grate both types of cheese on a coarse grater and combine. Cut each layer of puff pastry into 2 strips. Roll them out slightly to make them wider.
On the long side, begin to roll each strip towards the middle until there is about 5 cm between them. Connect them on the right and left, then carefully fasten (you should get a “boat”). Move the sides apart to create more space in the middle.
Preheat the oven to 200°C. Place the resulting dough pieces on a baking sheet lined with baking paper. Distribute the cheese among the boats. Lightly beat one egg and brush it onto the edges of the puff pastry using a brush.
Bake khachapuri for 15 minutes. Then take out a baking sheet with them, release an egg onto each. Return to oven for 5 minutes. Before serving, khachapuri can be sprinkled with herbs.
