To prepare, we will need butter and a container in which we will heat the butter.
Soften the butter a little at room temperature and cut it into small cubes. If the butter is very hard, you can grate it on a coarse grater.
Place a saucepan or saucepan with a thick bottom on the stove and add oil. Turn the heat to medium. Once the butter has melted, reduce the heat to low.
Very carefully remove the foam that will periodically form on the surface of the oil. This can be done with a flat slotted spoon with small holes or a strainer. Do not stir the butter with a spoon during the process. Some of the foam with impurities will rise to the surface, and some will settle to the bottom. You will need to ensure that the sediment on the bottom does not rise while you skim off the foam.
At first the oil will be cloudy, but when heated and skimmed, it will become clearer and acquire an intense yellow color.
After 15-20 minutes, when the foam stops forming, carefully pour the oil into another pan, so as not to pour the resulting sediment into it - if the oil is left in the first pan, the sediment will begin to burn and ruin the taste.
Continue heating the oil in another pan over low heat. The finished oil should have a slight nutty odor, transparent consistency and intense yellow color.
