There are several versions of the origin of fortune cookies. The most popular one is the "Chinese-American" version. It is said that in the early 20th century, the inhabitants of Chinatown in San Francisco did everything possible to attract tourists with Eastern exoticism, primarily culinary attractions. It was then that restaurateurs were offered to introduce an unusual dessert into their menus — cookies with a piece of paper inside bearing a wise Eastern saying. The idea was so well-received that today several major companies professionally produce these cookies. Of course, fortune cookies can be bought, but it is much more interesting to make them yourself for a family celebration. Moreover, in this case, you can also choose the most appropriate words and write them on the cherished strips of paper.

Prepare fortune cookie dough. Cut butter (45 g) into cubes, place in a small ladle and, stirring, dissolve over medium heat. Remove from heat and let cool.
Place the egg whites in a mixer bowl and beat at high speed until a fluffy, thick mass is obtained that will firmly adhere to the whisks when lifted up.
Gradually add powdered sugar into the protein mixture without stopping whisking. Blend until smooth and fluffy (cookie dough should be light and smooth)
Add melted butter and flour to the whipped whites and mix. If the cookie dough is too thick, add 2-3 tbsp. l. water. Leave for 15 minutes.
Preheat the oven to 180°C. Line the baking sheet on which you plan to cook the cookies with high-quality parchment paper and grease with the remaining butter.
Place tablespoonfuls of dough onto the prepared baking sheet, spaced apart. Flatten each one to form a small pancake (about 8 cm in diameter). Bake the cookies until the edges begin to brown.
Remove the hot cookies from the baking sheet and quickly roll them up, placing a fortune note in the middle of each. Fold each cookie in half and press the edges lightly to form a shell shape. Then take it by the middle, place it on the edge of a mug or glass and bend the edges, pressing it to the outer and inner sides.
