Red lentil soup with chicken is just made for the cold season. If you complement this first course with slices of crispy white bread, you might not even need a second course at all. The soup is made without broth, using water, but with pieces of chicken fillet, which, together with the lentils, make the dish especially hearty. It also includes vegetables: onion, carrot, bell pepper, tomatoes, and potatoes. The process of making chicken soup is not complicated but requires at least an hour of time to chop the ingredients, sauté some of them in oil, and then cook everything together over medium heat until fully done. Note: you'll need a fairly large pot because a small one might simply not suffice.

Prepare red lentil chicken soup ingredients. Peel the onion and chop finely. Peel the carrots, wash and grate on a coarse or medium grater.
Wash the sweet pepper and cut it in half. Remove membranes and seeds. Cut the pulp into small cubes. Wash the tomatoes and also cut into small cubes.
Heat vegetable oil in a small frying pan. Add onions and carrots. Stirring, fry over medium heat for 5 minutes. Add sweet pepper. Stir and cook, stirring, for another 5 minutes.
Add chopped tomatoes to the pan. Lightly salt and stir. Fry, stirring, over medium heat for 5 minutes. Make sure that the vegetables used in the soup do not burn. If necessary, reduce heat to low.
Pour 2.5 liters of cold water into a large saucepan. Bring to a boil and add a little salt. Transfer the fried vegetables from the frying pan to the water. Bring to a boil and cook for 5 minutes.
Peel, wash and cut the potatoes for soup into small cubes. Place in a colander and rinse under running water to remove excess starch on the surface.
Add potatoes to soup pot. Peel the garlic. Pass through a press directly into the pan. Salt and pepper to taste. Cook over low heat for about 15 more minutes.
Wash the parsley, dry it, remove the rough stems. Finely chop the remaining greens. Pour red lentil soup with chicken into serving bowls. Add chopped greens to each.
