Idaho potatoes, fried in a pan, are a great alternative to the classic baked version. This recipe is suitable for those who, for example, don’t have an oven. The overall cooking technique is the same here: the potatoes are cut into neat wedges and seasoned with oil. The only difference is that they are placed not on a baking sheet, but in a pan. And to make the wedges seem like they were baked, a small secret is used: the pan is covered with a lid. This allows the potatoes to cook from the inside first. Wash the potatoes thoroughly with warm water using a brush and cut into medium-thick slices. No peeling required. Transfer them to a large bowl.
Separately, in a small bowl, combine vegetable oil, dried herbs and granulated garlic. Add salt and ground black pepper to taste. Stir.
Pour the prepared oil mixture over the potatoes. Stir until it is evenly distributed throughout each slice. Place a large skillet over high heat and heat.
Place the potatoes in the pan. Stirring, fry for 5 minutes. Reduce heat to low. Cover the pan with a lid. Keep on fire for 15 minutes. Then open and fry the potatoes again over medium heat until golden brown.
