About This Recipe

This apricot cheesecake recipe convincingly proves that making such a dessert at home doesn't require supernatural culinary skills. In other words, even a not-so-experienced cook can handle the task. The key is to follow the preparation method, baking time, and also (very importantly!) not to rush it and allow the apricot cheesecake to cool thoroughly. It's not just about "tasting better": the consistency of the creamy part needs to stabilize and firm up.

Preparation Steps

Step 1

Prepare the cheesecake base. Melt the butter. Grind the cookies in a blender. Pour into a bowl, combine with powdered sugar and melted butter.

Transfer the resulting mass into a springform pan with a diameter of about 24 cm, lined with baking paper. Compact, spreading along the bottom. Place in the refrigerator for 20 minutes.

Remove the eggs and cream cheese from the refrigerator. Let them come to room temperature. Wash the apricots, then cut crosswise along the top with a sharp knife.

Place the apricots in a bowl and cover with boiling water. Leave for 2 minutes. Peel the apricots. Cut into halves and remove the pits. Place the pulp in a blender bowl. Grind into puree. Set aside three tablespoons.

Mix all cheesecake filling ingredients with a mixer at medium speed. Pour the resulting mass onto the cooled base in the mold. Spread apricot puree in portions on top.

Bake the cheesecake for about 70 minutes at 160°C. The center of the pie should jiggle a little. Let the cheesecake cool in the open oven for an hour. Then take it out. Carefully remove the side of the pan (you should first run a knife along it from the inside, separating the side surface of the pie). Place the cheesecake in the refrigerator overnight.
