About This Recipe

Cheesecakes with sour cream topping, which are often prepared in the southern regions of Russia, can be considered our answer to the famous cinnamon rolls. There are differences, of course, particularly in the filling, as in our case we wrap a curd mixture with raisins and eggs in the dough. Essentially, these are still our traditional cheesecakes. However, the preparation method is reminiscent of the one used for cinnamon rolls: the dough is rolled into a log and then cut into large slices. In the end, the finished cheesecakes are covered with sour cream topping, which vaguely resembles the final stage of making cinnamon rolls, where they are liberally coated with cream cheese icing. Prepare them and see for yourself that our version is just as good as the foreign one. They will be delicious and aromatic! Step 1

Soak the raisins for filling the cheesecakes in hot water for 25 minutes. Place the cottage cheese in a colander lined with gauze, press with a heavy press, leave for 1 hour. Then rub the cottage cheese through a sieve, mix with the beaten egg with sugar. Dry the raisins and add to the cottage cheese. If you use candied fruits, finely chop them and also add to the cottage cheese.

Roll out the dough for cheesecakes on a floured work surface into 2 rectangular layers 0.5–0.8 cm thick. Spread the filling in an even layer over the entire surface of each layer. Roll the layers into rolls.

Cut each roll into circles 2-3 cm thick, place the circles on a baking sheet at some distance from each other. Bake in an oven preheated to 190°C until golden brown, 20–25 minutes.

Step 4

Beat the sour cream with a whisk until fluffy. You can add a little sugar or powdered sugar. Place the finished cheesecakes hot in a saucepan and immediately pour sour cream on top. Cover with a lid or foil.
