Juicy pork cutlets in a frying pan are a meal you'll fall in love with from the first bite. It's impossible to stay indifferent to a fluffy, aromatic cutlet paired with tender mashed potatoes as a side! And it's not hard to prepare this dish, especially if you have a large and moderately fatty piece of pork on hand. Simply grind it in a meat grinder using the finest grid, add soaked bread, salt, spices, onion, then knead it thoroughly and beat the mince well. After that, all that's left is to shape the cutlets to the desired size and fry them in a well-heated pan with oil.

Remove the minced meat from the refrigerator 30 minutes before cooking. Place kefir in the freezer for 10-15 minutes. Cut the onion into small cubes. Finely chop the garlic with a knife or pass through a press.
Heat the vegetable oil well (2-3 tbsp) in a frying pan with a thick bottom. Melt the butter in vegetable oil and add the onion. Sauté the onion, stirring occasionally, for 5-7 minutes.
Add the garlic to the frying pan and fry over low heat, stirring occasionally, for 2 minutes. Transfer the onions and garlic to a separate bowl and let cool.
Transfer the minced meat into a deep bowl, pour in ice kefir. Add semolina and sautéed onion and garlic to the minced meat, add salt and pepper and knead thoroughly for 5 minutes.
Beat the minced meat at least 15 times against the bottom or walls of the bowl in which you kneaded it. Leave the minced meat to steep for 15 minutes, this is necessary so that the semolina swells well, it will prevent the cutlets from falling apart. Cover the board with cling film and sprinkle with flour. Place a wide bowl of cold water nearby for your hands.
Dip your hands in cold water, shake off, and shape into patties of your desired size. Roll each cutlet in flour; you don’t need a lot of flour, otherwise it may burn and spoil the taste.
Heat vegetable oil in a frying pan and fry the cutlets on both sides until golden brown on high heat. Reduce heat to low and cook patties for 15-20 minutes (depending on size), turning them every 3-4 minutes.
