Looking for a quick way to cook fish? "Polish Cod" is what you need! This fish recipe has existed since time immemorial and was popular during the Soviet era. At first glance, this dish has a dietary nuance since the cod is either boiled or steamed. However, the delicate sauce made with butter, egg, and herbs gives the fish an exquisite creamy taste, and the bed of mashed potatoes, also seasoned with butter, balances the lightness and makes the dish hearty. It cooks quickly and is eaten instantly. It remains a mystery who invented this sauce and why it is called Polish. Interestingly, it is not found in any Polish cuisine collection. Moreover, cod is not the most typical fish for this country, where pike-perch is more common. But the recipe is considered Polish. Cook and enjoy the exquisite taste.

To prepare cod with Polish sauce, first boil the fish. To do this, prepare vegetable broth. In a saucepan, bring 2 liters of water to a boil, add peeled onions and carrots, a stalk of celery, peppercorns, bay leaves, salt and cook the broth over high heat for 15 minutes.
Squeeze the juice out of the lemon. Cut the cod fillet into large pieces, place in boiling broth, pour in 1 tbsp. spoon of lemon juice, reduce heat and cook the fish for 10-12 minutes, depending on the thickness of the pieces. Using a slotted spoon, remove the finished fish from the pan onto a plate.
For the Polish sauce, boil the eggs hard, cool, peel and grate on a medium grater. Chop the parsley. Melt butter in a frying pan, add a few tablespoons of fish broth, 1 tbsp. a spoonful of lemon juice, parsley, grated eggs, salt, stir and cook for 2 minutes.
Place the prepared cod in the pan so that all the pieces are covered with the sauce, cook for another 2 minutes and turn off the heat. Let the fish sit and soak in the sauce for 5 minutes. Serve cod in Polish sauce with mashed potatoes.
