Prepare all the ingredients for the katsu sando sandwich. Cut the chicken fillet into 2 schnitzels. Use the flat side of a mallet to pound through the cling film. Salt and pepper to taste.
Lightly beat the eggs in a bowl. Pour flour into another, and crackers into a third. Dip each chicken schnitzel in eggs, roll in flour, then dip in eggs again and roll in breadcrumbs.
Heat vegetable oil in a frying pan. Add the prepared chicken fillet and fry the katsu sando sandwich base on both sides until golden brown. If necessary, cook until done, covered.
Shred the white cabbage. Place in a bowl. Pour in lemon juice or apple cider vinegar. Stir the cabbage, squeezing it lightly with your fingers, and let sit at room temperature for 15 minutes.
Toast the slices of bread for the katsu sando in the toaster. Coat two with hot sauce. Place chicken schnitzels on top (if necessary, they can be coarsely chopped).
Place pickled cabbage on chicken schnitzels. Cover with the remaining slices of bread and press lightly to make it easier to eat. Serve the chicken katsu sando immediately.
