Cake "Monastyrskaya Izba" from lavash is a light version of the famous homemade dessert that many people know and love. This recipe is great, for example, for hot summer days when you don’t want to stand by the stove for long. For the filling of the lavash rolls, we suggest using canned cherries, but fresh ones from the garden will do just as well. Whether to add sugar in this case is up to you. It seems to us that the sweetness provided by the sour cream and condensed milk cream will be quite sufficient for the cake.

Prepare all the ingredients for the cake. Place thin pita bread on the work table and cut into 15 rectangles or squares. This is the basis for future “logs” for the “hut”.
Lay out the strips of pita bread on the work surface in one layer. Cover with damp towels. Leave for 10 minutes. After this procedure, the lavash strips will become more flexible.
Prepare the filling for the “log” tubes. The cherries should first be thrown into a wide sieve and the syrup should be allowed to drain. After which the fruits can be placed on paper towels to keep them as dry as possible.
Prepare the cream for the Monastic Hut cake from lavash. Place sour cream and boiled condensed milk in a mixer bowl. Both products must be at the same temperature.
Beat sour cream with boiled condensed milk with a mixer at high speed. This may take about 7-10 minutes. The cream should be soft, fluffy and have a uniform consistency.
Place a square or rectangle of pita bread on your work table. Place a row of canned cherries on one edge. Roll it up. Also prepare the remaining “logs” for the cake.
Grease a large flat plate with a small amount of cream. Place 5 lavash rolls with cherries on it. Cover generously with cream. Add 4 more rolls. Also cover with cream. Using this principle, assemble the entire cake.
Place the Monastic Hut from pita bread with cherries in the refrigerator for 3 hours. Grate the dark chocolate on a medium or coarse grater. Sprinkle it over the chilled dessert and serve.
