Enoki mushroom rolls in bacon are an excellent and very impressive appetizer, suitable for both everyday and festive tables. Even a child can easily prepare this snack, it is so simple. Moreover, it requires a minimum of ingredients — just a bunch of enoki mushrooms and a pack of bacon. If you don't like pork, there is now bacon available made from beef, chicken, and even turkey. Since enoki mushrooms do not have a pronounced flavor, the bacon in this recipe is responsible for the flavor. And of course, the rolls should definitely be served with various sauces.

Prepare the sauce. Grind the chili and garlic into a smooth paste using a blender or mortar and place in a bowl. Add 2 tbsp to the bowl. l. soy sauce, lime juice, corn syrup. Mix everything thoroughly.
Rinse the mushrooms and place in a sieve, allowing the water to drain completely. Cut off 2-3 cm of roots from a bunch of enoki. Divide the bulk into small bunches, 2 cm thick.
Lay out the bacon strips on the board. Place a bunch of mushrooms on the edge of the strip so that the legs stick out 1 cm. Gently brush the part of the mushrooms where the bacon is on top with the sauce. Wrap the bundles in rolls.
