If you are preparing not too dietary cutlets, then use butter. It must be frozen in advance so that it is well ground in a meat grinder.
Thaw the pollock fillets carefully on a shelf in the refrigerator. Cut off the crusts of white bread; in the end you should have about 200 g of crumb. Soak the bread in milk for 10 minutes.
Squeeze out any excess milk from the bread crumb. Cut the onion so that it is the right size for a meat grinder. Place the pollock fillet in a sieve to drain excess liquid from defrosting.
First pass the pollock with butter through a meat grinder with a fine grid, and then the onion and white bread. Salt and pepper the minced meat in a bowl and mix thoroughly.
Set the oven to preheat to 180°C. Pour cold water into one bowl, add breadcrumbs or flour into the second. Cover a baking sheet with parchment.
Wet your hands in cold water and form into patties of your desired size. Beat each cutlet in your palm, tossing it from one hand to the other. Roll the formed cutlet in breadcrumbs and place on a baking sheet.
Bake pollock cutlets in a non-convection oven for 20-30 minutes depending on their size. The fish cooks quite quickly and the main principle is not to dry it out.
