Chickpea balls with cheese – an unusual hot appetizer. Chickpeas are present in two textures – as a puree made from boiled chickpeas with tahini sesame paste and lemon juice, and as crumbs from baked chickpeas with spices and olive oil. Thanks to this, the texture of the chickpea balls baked in the oven with spicy cheddar cheese comes out interesting and contrasting. The melted cheddar adds additional notes to this symphony of textures.

Soak the chickpeas for 4 hours, then cover with clean water and boil until tender, 1 hour 15 minutes. Drain in a colander and save the broth.
Place half the chickpeas in a blender glass, add tahini, lemon juice and 100 ml of chickpea broth, add salt and puree.
Dry the remaining peas, place in a bowl, add paprika, cumin and 1 tbsp. l. olive oil, salt. Toss the peas until they are all coated in the spice mixture, then spread in a thin layer on a parchment-lined baking sheet.
Bake the chickpeas at 200°C for 15 minutes, stir with a spatula and cook for another 15 minutes. The peas should become crispy and golden brown. Place the chickpeas in the bowl of a food processor, cool slightly, and chop into coarse crumbs.
Grate 100 g of cheese on a fine grater. Cut the remaining cheese into 1 cm cubes. Separate the cilantro leaves from the stems and chop them. Whisk the egg in a bowl.
Combine the puree with grated cheese, cilantro and egg, add chickpea crumbs and stir. Place tablespoonfuls of dough onto a baking tray lined with baking paper. You should get 14–16 balls
Lightly press a cube of cheese into the center of each ball. Using a wet spoon, adjust the shape of the balls. Drizzle with remaining olive oil and bake on the middle rack of the oven for 20 minutes. Drizzle with olive oil a second time and continue baking the chickpea balls until golden, 6 to 8 minutes more. Transfer to a plate and serve immediately.
