Chicken shawarma with cabbage, cucumber, and tomato is our answer to any street shawarma. It may look similar to street food on the outside, but the homemade version is always tastier. And you can be one hundred percent confident in the quality of the finished product. This shawarma is easy and quick to prepare with accessible ingredients. The main ingredients – boiled chicken, vegetables (cabbage, cucumber, tomato), and greens – are generously soaked in sauce and wrapped in Armenian lavash. By the way, we made the dressing unusual – from homemade mayonnaise, Greek yogurt, and adjika. Just imagine this combination of chicken fillet, imbued with all the aromas of the broth in which it was boiled, juicy vegetables, and a piquant sauce. Very tasty!

Boil the chicken in boiling water until fully cooked. Remove the chicken from the heat and leave to cool in the broth.
For the filling, cut tomatoes, pickles and carrots into thin slices. For carrots, you can use a housekeeper knife.
For the salad, chop the cabbage thinly. Cut the fresh cucumbers into strips and chop the onion. Mix cabbage, cucumbers and onions, add salt, add lemon juice, mix with your hands and leave for 15 minutes. Drain off excess juice, add zest, season with oil and stir.
For the sauce, mix the ingredients until smooth, adding adjika to taste.
Preheat a waffle iron or sandwich maker. If these devices are not available, you can use a grill pan
Remove the chicken pulp from the bones and disassemble into fibers. Season the chicken with 3-4 tbsp. l. sauce.
Grease the pita bread with sauce, not reaching 1 cm from the edges. Place chicken, vegetables and salad on the edge closest to you, roll into a roll and heat in a waffle iron/sandwich maker for about 2 minutes. Before serving, cut the shawarma in half crosswise.
